Chef Don Potts has a decades long history working in Salida restaurants. He began in Denver restaurants in 1970 and later moved to Salida to work with the Thomas family at the Salida Inn. Don then decided to enroll in the Western Culinary Institute in Portland, after which the Hyatt Regency Hotel Group hired him. He returned to Salida and worked at Monarch Lodge, Shavano Inn, Patio Pancake, and other local restaurants. In 2012, Don and his wife Sheree opened Shallots Restaurant in Salida.
